Red lentils contain less fibre than green lentils (11% instead of 31%) and because of their size they cook faster (about 15 minutes). They are rich in protein and fibre. Because of its low content of insoluble (hard) fibre, it is also easier to digest, especially for people with irritable bowel syndrome. If you boil it well, it is ideal for making mashed potatoes. You can also make it into soup, following the same recipe as classic lentils, or use it to make delicious exotic salads.
