The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora wind and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary.Vinification: The grapes are harvested by hand between the end of August and the first ten days of September, in crates that are brought to the winery and immediately processed at a low temperature, with a limited 50% yield to obtain a white must from a black grape. The must undergoes an initial alcoholic fermentation and remains on the lees for 36 months.Tasting: The colour is a brilliant golden yellow, with a minute and persistent perlage. The bouquet is decidedly intense and persuasive, withclear hints of small fruits and nuances of cloves. The palate is full and decisive, with spicy hints; the finish is long and very satisfying.Combinations: Excellent as an aperitif, it is ideally paired with the whole meal and with strong-tasting dishes. Given its complexity, it can also be enjoyed as a meditation sparkling wine. Recommended serving temperature: 6-8° C.
