Organic peasant flour Type M is made from durum wheat, it isstrong and rich in gluten, it has a characteristic yellow colour andDepending on the seasoning, it can be finely ground or coarser. Organic rustic flour Type M is ideal for makingbreads, (with the addition of yeast or yeast), since it gives volume andelasticity in the dough, while it is also ideal for the preparation ofpasta, to roll out dough for pies and doughs in general, althoughis harder to open. This is used to make the composite, in a ratio of 1:1with flour type 70% and the well-known rustic bread, with thecharacteristic compact structure and crust.
