Cashews are an excellent source of protein, carbohydrates, fibre, iron and potassium. The antioxidants in cashew nuts are beta-carotene and vitamin E. They contain no cholesterol. However, due to the high fat content (45%), they are quite perishable, and should not be kept too long.
