The pedimezi is a mildly processed sweetener derived from the natural sugars of the fruit used in its preparation. More specifically, it is a thick, dark-coloured syrup, which in our country is usually made using grape must. The production process is very simple and does not require the addition of sugar, preservatives or colouring. In fact, grape molasses is simply the product obtained after the slow boiling of the grape must. Petimezi can be used instead of common sugar in cakes or in hot and cold drinks, and can also be added to yoghurt, ice cream, sauces, vinaigrettes, marinades, etc. Grape molasses has a low glycemic index and, finally, in traditional medicine it is even used as a remedy for coughs and sore throats.
