Grapes: 100% Sauvignon Blanc Soil: Medium mixture Breeding System: Backrest Vinification: The grapes are harvested manually during the coolest hours of the day. After harvesting, they are cooled using dry ice. Destemming then takes place and the must is cold-stabilised at around 2 °C for 4 to 5 days. After this phase, alcoholic fermentation begins at a controlled temperature (12/14 °C) for about 10/15 days. After fermentation, it matures on the fine lees for two/three months. The wine matures in steel tanks. Oenologist: Vito Giovinco Olfactory scent: Giallo paglierino alla vista. Al naso emergono fiori di sambuco e frutto della passione, con richiami di erbe aromatiche e leggere note minerali. Il sorso è fresco ed equilibrato, sostenuto da una buona struttura e da un finale persistente Combinations: Perfetto come aperitivo. Si sposa anche con pesci crudi o in zuppa e con ortaggi, vegetali e ingredienti aromatici. Servire a 10 °C.
