White wine - Milazzo - Maria Costanza white reserve Format: Glass bottle 75cl Intro: Sicily is one of the most wine-producing regions in Italy, together with Veneto, Emilia-Romagna and Apulia. Sicily's wine-growing traditions are ancient and date back to the Phoenicians, Romans, Greeks and Arabs. Sicily boasts numerous indigenous grape varieties such as frappato, nero d'Avola, inzolia, catarratto, nerello mascalese and nerello cappuccio, malvasia delle Lipari and moscato d'Alessandria (zibibbo, from the Arabic zibib meaning 'a raisin'). Based on the type of grape, we can understand the cultivation area of the various vines mentioned above: Muscat wines, Moscato di Siracusa and Moscato di Noto we find them in the Syracuse area Wines based on Nero d'Avola, Frappato and Ceraselo di Vittoria DOCG are produced in the province of Ragusa Grillo, Grecanico, Catarratto and Inzolia vines are the protagonists of the Alcamo DOC La Malvasia delle Lipari famous Aeolian Islands in the Messina area On the slopes of Etna, considered 'an island within an island' due to the characteristic lava soil and the microclimate that characterises this area, we find Nerello Mascalese, Nerello Cappuccio, for red, rosé and sparkling wines and Catarratto and Carricante for white wines. From these vines are produced the famous Etna DOC. The province of Caltanissetta is home to one of Sicily's most recent DOCs, the Riesi Marsala is a historic DOC that takes its name from the municipality of the same name in the province of Trapani. Also in the province of Trapani is the island of Pantelleria, where the Passito di Pantelleria Vino bianco – Milazzo – Maria Costanza bianco riserva – Scheda tecnica Grapes: Inzolia - Chardonnay - Viognier - Sauvignon Blanc Type of terrain: Contrada Milici: plateau of marly origin with a high clayey, strongly calcareous component, rich in skeleton - Contrada Fondirò, Munti area: black clayey soils, strongly mineral - Contrada Fondirò, Arena Vecchio area: in the highest part we have a limestone outcrop emerging in the hill, a hillock with a considerable slope surrounded by grey loamy soils of the valley floor Breeding system: Espalier with spurred cordon and guyot pruning Harvest period: Chardonnay, Viognier, Sauvignon Blanc: second half of August - Inzolia: mid-September Mode of collection: Selection of bunches on the vine and manual harvesting, in 14 kg crates Vinification: Cold maceration of the Viognier and Chardonnay grapes, followed by fermentation in steel tanks. Sauvignon Blanc and part of the Chardonnay complete fermentation in oak barrels. The Inzolia is fermented in steel tanks. Maturation: 12 months, in oak barrels and steel tanks, with continuous batônnage Alcohol: 13 % Vol Match: Crustaceans, tuna and fassona tartare, cod in confi t, risotto with taleggio cheese cream, truffle, long matured raw ham. It also pairs perfectly with light meats and vegetable dishes. Serving temperature: approx. 12 °C Potential ageing: Over 10 years Sensory notes: Brilliant straw yellow in colour. The nose is frank, rich and complex: clear notes of aromatic Mediterranean vegetables and yellow flowers, dandelion, chamomile and wild rocket. Tropical citrus and honey notes blend with tertiary hints of hydrocarbons, barely hinted at and well integrated with vanilla. In the mouth, it is warm, full and structured. Opulent and rightly savoury with an uncommon persistence for a white wine.
