Grapes: 100% Nerello Mascalese Soil: Medium mixture Breeding System: Backrest Vinification: Le uve sono raccolte prima della completa maturazione per mantenere un ottimo equilibrio acido. Successivamente sono delicatamente pressate per evitare l’estrazione di colore dalle bucce. Il mosto ottenuto fermenta in acciaio a temperatura controllata (16°C). La presa di spuma avviene dall’inizio della primavera successiva alla vendemmia. Dopo la seconda fermentazione in bottiglia il vino matura sui lieviti tra 24 e 36 mesi. Lo spumante non è dosato. Oenologist: Vito Giovinco Awards: GOLD MEDAL Concorso Enologico Internazionale “Città del Vino” 2024. Olfactory scent: Luminous straw yellow, with a fine, persistent perlage. The nose immediately reveals chalk, mineral, iodine and herbaceous notes. In the background are bread crust, floral notes and tropical fruit. The mouthfeel is full, enveloping and mineral. The long, fresh finish reveals importance and longevity. Combinations: Perfect throughout a meal or on its own. Goes well with oysters, caviar, fried food and eggs. Also try with cheeses and white meats. Serve at 8 °C.
