Prosecco - Tenuta Sant'Anna - Le Storie Cuvèe millesimato brut Format: Glass bottle 75cl   Prosecco - Tenuta Sant'Anna - Le Storie Cuvèe millesimato brut - Data sheet Grapes: Glera Grape yield: Approx. 180 qli/ha Origin: South-east Veneto Altitude: 30-40 m asl Breeding method: Free cord and double inverted Planting density: 3,600-4,000 plants/hectare Analytical data: Alcohol 11% vol - Total acidity 5.5 g/l - Sugars 9 g/l Longevity: 1-2 years Land: The terroir is a moderately deep loamy-clayey and alkaline soil, typical and characteristic of the Veneto plain. It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds. Vinification: Vinification takes place with crushing and soft pressing with rapid separation of the must from the skins. The must ferments in steel tanks at a controlled temperature of 15-16°C in order to preserve the original aromas. Once the alcoholic fermentation has taken place, it proceeds to the prise de mousse in an autoclave. The sparkling process using the Martinotti Method lasts 40 days. Tasting: It has a straw-yellow colour of medium intensity. In the goblet it forms a crown of dense, minute mousse, which feeds on small bubbles for a long time. On the nose, hints of acacia flowers, peach and pear. On the palate it is easy and pleasant to drink, initially fresh and soft on the palate, it leaves room for fruity hints and a pleasant savouriness on the finish Combinations: The perfect aperitif bubble, this prosecco lends itself to pairings throughout the meal. It prefers fish dishes: appetisers, risottos and fried dishes are its favourites.
