Prosecco - Tenuta Sant'Anna - Le Storie Prosecco DOC extra dry Format: Glass bottle 75cl - 1.5Lt Prosecco - Tenuta Sant'Anna - Le Storie Prosecco DOC extra dry - Data sheet Grapes: Glera Grape yield: About 180 qli/ha Origin: South Eastern Veneto, Tenuta Sant'Anna Altitude: 30 - 40 metres above sea level Breeding method: Double inverted and free cord Planting density: 3,600 - 4,000 plants per hectare Analytical data: Alcohol 11% vol - Total acidity 5.8 g/l - Sugars 14 g/l Longevity: 24-30 months Land: A moderately deep, alkaline loamy-clayey soil, typical and characteristic of the Veneto plain. It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds. Vinification: Vinification takes place with crushing and soft pressing with rapid separation of the must from the skins. The must ferments in steel tanks at a controlled temperature of 15-16°C in order to preserve the original aromas. Once the alcoholic fermentation has taken place, it proceeds to the prise de mousse in an autoclave. The sparkling process using the Martinotti method lasts 40 days. Tasting: It is straw yellow with slight greenish notes. In the goblet it forms a crown of dense, minute mousse, which feeds on small bubbles for a long time. The nose smells of acacia flowers, peach and pear. On the palate it is easy and pleasant to drink, initially fresh and soft on the palate, leaving room for fruity hints and a pleasant savouriness on the finish. Combinations: Very versatile, it is particularly appreciated as an aperitif, with hors d'oeuvres and appetisers in general, with cheese and light cold cuts.
