The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora and winds from the Adriatic Sea; the significant temperature range between day and night. North-west orientation enhances the freshness of the harvested grapes. Vinification: The grapes are harvested manually between the end of August and the first ten days of September. The crates are quickly brought to the cellar to be immediately processed at a low temperature. The resulting must is inoculated to proceed to the first alcoholic fermentation. At the end of this phase, it remains on the lees until the first few months of the following year, when frothing takes place. Fermentation in the bottle, monitored in its phases, lasts 12 months, followed by degorgement and a final period of bottle ageing. Tasting and pairing: First and foremost, the Blanc de noir expresses the essence of the grape variety, which is not concealed by its prolonged sojourn on the lees. On the nose, a delicate undertone with notes of pastry, white chocolate and hazelnut over which fresh, citrine sensations of yellow fruit emerge. Slight mineral hints (of graphite) appear at times. The taste is characterised by a dense, soft and enveloping perlage. Lively on the palate with persistent savouriness and a pleasant fruity acid vein.
