It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds. Vinification: Vinification is carried out by soft pressing of the grapes with rapid separation of the must from the skins. Fermentation takes place in stainless steel at a temperature of 15-16 °C, followed by ageing on the lees for three months. Tasting: Straw yellow with a golden nuance that recalls the colour of the grapes from which it is made. On the nose, aromas of green apple, pear and citrus fruits with floral hints and vegetable notes. The taste is characterised by an important freshness, accompanied by a good sapidity and discreet softness. Combinations: Cold meats and medium matured cheeses, first courses with meat sauces.
