Grapes: 100% Nerello Mascalese. Soil: Medium mixture Breeding System: Backrest Vinification: Harvesting is done manually. Afterwards, the grapes are cooled to 8 °C before soft pressing. The colour comes from a short maceration in the press for about 4 hours at a low temperature. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature (12 °C) for about 14 days. Oenologist: Vito Giovinco Olfactory scent: The colour is 'onion skin' pink, the nose expresses vegetal hints of roses and small red fruits. In the mouth it is fresh and enveloping, with the freshness and lightness typical of rosé wines. Combinations: Excellent as an aperitif. Recommended with tartare, raw seafood and not too structured dishes. Serve at 10 °C.
