White wine - Planeta - Chardonnay Format: Glass bottle 75cl Intro: Sicily is one of the most wine-producing regions in Italy, together with Veneto, Emilia-Romagna and Apulia. Sicily's wine-growing traditions are ancient and date back to the Phoenicians, Romans, Greeks and Arabs. Sicily boasts numerous indigenous grape varieties such as frappato, nero d'Avola, inzolia, catarratto, nerello mascalese and nerello cappuccio, malvasia delle Lipari and moscato d'Alessandria (zibibbo, from the Arabic zibib meaning 'a raisin'). Based on the type of grape, we can understand the cultivation area of the various vines mentioned above: Muscat wines, Moscato di Siracusa and Moscato di Noto we find them in the Syracuse area Wines based on Nero d'Avola, Frappato and Ceraselo di Vittoria DOCG are produced in the province of Ragusa Grillo, Grecanico, Catarratto and Inzolia vines are the protagonists of the Alcamo DOC La Malvasia delle Lipari famous Aeolian Islands in the Messina area On the slopes of Etna, considered 'an island within an island' due to the characteristic lava soil and the microclimate that characterises this area, we find Nerello Mascalese, Nerello Cappuccio, for red, rosé and sparkling wines and Catarratto and Carricante for white wines. From these vines are produced the famous Etna DOC. The province of Caltanissetta is home to one of Sicily's most recent DOCs, the Riesi Marsala is a historic DOC that takes its name from the municipality of the same name in the province of Trapani. Cultivation methodaccording to organic farming criteria and the SOStain® protocol; grassed soils with clover, vetch, yellow mustard and wild flora to increase organic matter and nitrogen content, promoting the vitality of soil microfauna; pest control with sulphur and copper in minimum quantities; pest control with beneficial insects, sexual confusion and the application of natural corroborants such as zeolite, kaolin and plant extracts. Harvest time10-31 August. VinificationThe grapes were harvested by hand into 16 kg crates and refrigerated at around 12-14 °C. They were then destemmed, crushed and passed to soft pressing and static sedimentation at a low temperature, 6-7 °C; then the limpid part was racked off and fermented in 225 l Allier oak barriques at approximately 17-19 °C for 5/7 days. At the end of fermentation, the wine was matured on the primary lees - with bâtonnage performed weekly for the first 5 months, then every 14 days - until completion of 11 months; it was then bottled. Refinement: in 225-litre Allier oak barrels, new 40% 2nd passage, 30% 3rd passage. BottlingJune 2023 Alcoholic strength: 13.5% vol. Total acidity5.50 g/l PH: 3,28 Ageing capacity8-10 years. Capone-piece natural cork. Organoleptic notesA pure Chardonnay that clearly reveals the characteristics that have made it so famous. From the richness of its light gold colour, deep but transparent, one can sense the pleasant contrast of creaminess and crispness that awaits us on tasting. It is in fact a soft white supported by a refreshing acidic vein that accompanies the entire tasting. A subtle mineral trait makes harmoniously dialogue the flavours of ripe yellow peaches, acacia honey and almond paste with the more peaty, cereal-like and toastiness that overlooks the powerful and balanced finish. MatchTry it, for a change, with freshly seared foie gras or roast veal with a mushroom sauce.
