Grapes: 60% Carricante - 40% Catarratto Soil: Sand and volcanic rock Breeding System: Espalier and sapling Vinification: The grapes are harvested by hand in small crates and vinified separately. Alcoholic fermentation of the carricante takes place in steel at a controlled temperature for about 12 days. The catarratto grapes, on the other hand, are cooled to 6 °C and left to macerate in the press for 4 hours. The freshly pressed must is then left to steep for 24 hours at a temperature of 8 °C. After this phase, alcoholic fermentation is triggered and lasts approximately 14 days at a temperature of 12 °C. Alcoholic strength: 13% Oenologist: Vito Giovinco Olfactory scent: A straw yellow wine with greenish highlights, it has an intense and slightly aromatic bouquet of white flowers, herbs and flint. On the palate it is elegant and mineral and shows balance between freshness and density. The finish is savoury, lively and persistent. Combinations: Excellent as an aperitif. It goes well with fish, both raw and cooked, and is also excellent with white meat and fresh fruit.
