It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds.Vinification: Vinification is carried out by soft pressing of the grapes with rapid separation of the must from the skins. Fermentation takes place in stainless steel at a temperature of 15-16 °C, followed by ageing on the lees for three months.Tasting: Delicate straw yellow with greenish highlights. Discreetly intense on the nose where the initial clear mineral note is later accompanied by fruity hints of golden apple and white peach, and floral hints of acacia. The palate is fresh and balanced. On the palate it is fresh and pleasant with a light aromatic persistence.Combinations: As an aperitif, fish and white meat dishes.
