A sedimentary formation consisting entirely of clayey marl alternating with layers of sandstone. The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality.Vinification: The destemmed grapes undergo a soft pressing. Alcoholic fermentation takes place in steel vats maintained at a controlled temperature. After fermentation, the wine rests on the lees for at least 3 months before being bottled.Tasting: Pale straw yellow colour with greenish nuances. The nose is pleasant with fruity scents among which the citrus notes stand out. On the palate it expresses good intensity while remaining an extremely slender wine, the finish leaving a citrine note typical of the variety.Combinations: As an aperitif, it is a delicate accompaniment to seafood starters, sea bass in salt, risotto with asparagus and various mousses and soufflés.
