The texture is sandy and the pebbles ('graves' in French) guarantee a high temperature range between day and night that enhances the aromas, fragrances and elegance of the grapes. The temperate climate is favourably affected by the presence of the Friulian Dolomites, which provide shelter from the cold northern winds and facilitate the mitigating effect of the Adriatic Sea to the south. Vinification: After harvesting at the end of August and a soft pressing, vinification takes place in white, immediately separating the skins from the must. This is followed by fermentation in stainless steel tanks at a controlled temperature of 15-16° C. Ageing takes place on the fine lees for at least 3 months. Tasting: It is straw yellow in colour with clear golden highlights. The nose is intense, aromatic, with hints of golden apple and citrus notes reminiscent of pink grapefruit. In the mouth it is complex, structured, and fills the palate with its savouriness and persistence. Combinations: Perfect on seafood, shellfish and flesh fish. Also excellent with white meats and local pâtés. Recommended serving temperature: 10- 12° C.
